Le Cirque 多采多姿
近二十年，Le Cirque(455 Madison Avenue, New York) 在紐約鰲頭獨占，是美國最驕矜華貴的法國食府，專門招待名流顯要，特地由法國聘請來的主廚 Daniel Boulud、 Sylvain Portay ，都是首屈一指。到九十年代，他們相繼脫離，這間食府停止在六十五街的宮庭式舊址，九八年搬去新址，裝飾新穎富麗，多姿多采，改用比較悠閒隨和的新姿態出現，重登紐約金榜，被選為九八年度紐約第六名最佳餐廳。千禧年初的 Wine Spectator 評酒雜誌甚至選之為全美第三名的餐廳。
在捲土重來以後，此店雖然維持豐富的菜單，包羅各色珍品如魚子醬之類，但烹飪風格並非純粹法式，而加入了不少地中海風味，譬如我所食之中最好的兩味，其一是「米蘭式會飯」(Risotto Alla Milanese)，另一樣是「龍蝦意式雲吞」(Lobster Ravioli)，都是意大利菜，烹調甚佳。此外還有鴨肉做的煙肉 (Duck Prosciutto)，這種煙肉也是意式，採用鴨肉不無新意，可惜太咸，伴送時蔬沙律亦嫌粗雜。野菇奶油濃湯 (Porcini Veloute) 則至為可口，鐵板燒魚 (Grilled Mahi Mahi) 和烤鱈墊薯餅 (Roasted Cod with a Brandade galette) 亦都不同凡品。
