I'm not in the beverages business, but I have some observations to share in this field because I track the food segment for investment.
First of all, we are flooded with wines, literally. Aussies (Barossa Valley), Chile, France (Bordeaux), Napa, and even New Zealand's Marlboro region are all bringing record winegrape acreage online. The WW wine price is going to crash given the current capacity, and believe it or not, there are even more planned in the pipeline. There was a recent Barron's article on this particular issue, dating about a couple of months back, you can go take a peek if you have Barron's subscription. China and India will be the last newfoundland where connoisseurs will have to be won over to accommodate all the extra wine production.
Second, I don't think male population in China are the ideal target market for red wines. Chinese male taste buds are more attuned to exciting flavors and higher alcohol content liquor. Why so? Because they are usually heavy chain smokers. I used to smoke, so I know the difference. Before I quit smoking, I used to have a penchant for spicy food because my taste buds could hardly detect milder flavors. That's why XOs, JohnnyWalkers sell, aside from the prestige conveyed by the hefty pricing point. Red wines are consumed more often, so you can't charge an arm and a leg for it. Liquors are consumed at night clubs in front of others, and red wine consumed at home for one's own enjoyment, showing-off is less of a motivation.
I would suggest you target the female white collars for red wine, particularly starting with Merlot, the easiest tasting among them all, not too dry, not as full-bodied as Pinot Noir. I particularly like Two Buck Chuck grown in Napa (and feel very proud kissing goodbye your French snobs), it is an outstanding value, 1.99 per bottle. Between my wife and myself, we can do about 2 bottles per week. I am not sure about the price point you are looking at in China, but asking some office lady to part with 50 RMB with a bottle each week to feel westernized and pampered doesn't sound that outrageous to me. However, you can't overcharge, because you are supposed to cultivate such a habit, which will bring repeat business and most importantly, an addiction.
You can't ask Chinese consumers to adapt to your wine, you have to adapt to their taste buds. I strongly disagree with your contending that they are clueless about the subtlety of French wines. If they can't taste the difference, they can't, end of story. If you are truly interested in developing this further, you should particularly look for types that go well with Chinese cuisine, since Chinese food has a certain resemblance to Italian food, so whatever the Italians choose to go with their food may do well in China as well.
